Homemade Freeze Meals: Breakfast Burritos

Cooking is one of my favorite hobbies. Anytime I get a chance to cook something different for my family, I take the opportunity. I especially enjoy cooking for my husband, and if he asks for something specific I always try to find a way to make that dish or meal.

Well, many months back my husband was on a breakfast burrito kick. My husband is a union operator and leaves most mornings before sunrise and many times doesn't return home until after sunset. I wanted to find a way to start his mornings off right, while making breakfast burritos that are healthier and cheaper than store bought, as well as being oh so delicious. To fulfill this need, I played around with my husbands favorite burrito ingredients until I found the right combination for his favorite breakfast treat.

**I want to note this is small batch of the breakfast burritos I usually make. This recipe can easily be doubled or tripled if you wish.

First, the ingredients you will need include 1/2 pound bulk pork breakfast sausage, 1/2 an onion, 1/2 a green pepper, 2 eggs, 4 flour tortillas (burrito size), and 3/4 cup of your favorite shredded cheese, I had finely shredded cheddar that worked perfectly.You will also need a dash of salt and pepper for the eggs.



Start by chopping the onion and green pepper.




Then put the breakfast sausage, chopped onion, and chopped green pepper to a medium sized skillet, over medium heat, and cook until sausage is browned and onion and green pepper have softened.

Meanwhile, while the sausage mixture is cooking, add the eggs to a small skillet over low heat then scramble them until cooked through. You will want to add a dash of salt and pepper to add a little flavor. You can also break eggs into a bowl and beat them before adding to the skillet, I just skipped the step so I would have less dishes :-)




Once, sausage mixture and eggs are cooked, set up your assembly line. Start by putting 1/4 of the sausage mixture onto the center of one tortilla, then add 1/4 of the eggs and 1/4 of the shredded cheese (about 3 tablespoons).



Roll the tortilla like a burrito: folding up the bottom (side toward you) over the filling, then fold in both sides, continue rolling the bottom toward the top making sure you are rolling tightly. I put the burritos on a cookie sheet and pot them in the freezer for a few hours until they have started to freeze.









After the burritos have had time to start to freeze, transfer them to a freeze bag.








When you are ready to eat them, pop 1 or 2 into the microwave for 2 minutes, turn them over and then cook for another minute until the burritos are steaming hot. My husband loves them with picante sauce or salsa, he unrolls the burrito pours some sauce in then rolls them back up but you could also dip them if you wish. They are wonderful plain as well.

Introduction

I have wondered what to write about for my "first ever" blog post. I have never been one to talk about myself, but I feel that I want to document my life for my family. Maybe this blog will help someone live a simpler life or give them an idea that can help their family, or maybe this blog will just help me out by providing evidence of the life I have lived. However no matter what, I hope to keep you up-to-date to the happenings as we strive for a simpler living one day at a time!

So without further adieu, here is an introduction of my soon-to-be-growing family.

This is my husband, Kyle, and I on our wedding day! We got married only a few short months ago in April, but we have been together almost 10 years so it seems like we have been married for years :) We have been together through thick and thin, and our relationship has only grown stronger. He is a great provider for me, and has allowed me to become a stay-at-home wife and soon-to-be mommy!


This is our little bundle of joy, due to join our family January 21, 2015! We couldn't be more ecstatic about welcoming this little one into the world. We aren't finding out the sex, so we have a great surprise arriving in January. My first pregnancy has been fairly easy (knock on wood), which has been a blessing. I am 22 weeks this week, and have been feeling the baby move a lot more, making me even more anxious to meet our little one.

Well as you can see, our family is a pretty common one, but we are loving every minute of this new, exciting journey!
